Since waffles and bread pudding are two of our favorite things, we decided to combine the two to make this fantastic Banana Bread Pudding! The aroma alone will make your mouth water, and we're confident that you'll fall even more in love after one bite. This recipe is perfect for dessert- and even better with a scoop of vanilla ice cream on top. We also recommend having a slice for breakfast- right along with your morning coffee!

Suroviny: 

  • 1 cup FlapJacked Banana Hazelnut Mix
  • 1 egg
  • 1/2 cups water
  • 1 cup milk (we used unsweetened almond milk)
  • 2 eggs
  • 1/2 tsp ground cinnamon
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1 large, ripe banana
  • 2 TBSP chopped walnuts
  • optional: 1/4 cup chocolate chips

Postup:  Start by making the waffles: In a bowl, combine the FlapJacked mix, 1 egg and 1/2 cup of water. Stir well to create a thick batter. Let batter sit while your waffle iron heats up. Use all of the mix to bake waffles (cook per manufacturer's directions). You should end up with 2-3 waffles.
Pre-heat oven to 350". In a large bowl, whisk together eggs, almond milk, vanilla extract, cinnamon and maple syrup. Cut the waffles and banana into small, 1" cubes and add into the bowl. Add in walnuts and stir until waffles are completely coated with the egg/milk mixture.
Liberally coat a 2-1/2 quart casserole dish with nonstick cooking spray. Pour mixture in and spread out evenly. Place in the oven (uncovered) and bake for 45 minutes. Remove and let cool for 10 minutes before serving. ENJOY!

We adapted one of our favorite healthy bites recipes to create these delicious Cookie Crumb Protein Bites using FlapJacked Banana Hazelnut mix. These are perfect for an afternoon snack, before or after a workout or when you want to enjoy just a bite of cookie flavor.

Suroviny: 

  • 2/3 cup FlapJacked Banana Hazelnut Mix
  • 1/3 cup vanilla protein powder
  • 1/3 cup coconut peanut butter
  • 1/3 cup honey
  • 1 tsp coconut extract
  • 1 TBSP cold water
  • 1/3 cup crushed cookies (we used Lucy's Gluten Free Chocolate Chip) (optional) chocolate chips, nuts, coconut flakes, dried fruit, etc.

Postup:  Whisk the FlapJacked mix and protein powder together in a medium bowl. Add in the peanut butter, honey and coconut extract and stir. Mix in water and stir again. Add in crushed cookies and use your hands to mix into the dough. Using a tablespoon, scoop out a rounded tablespoon of batter and roll into a ball using your palms. Repeat until dough is gone- you will have about 20 bites. Store the bites in a sealed container in the refrigerator or freezer. ENJOY!

BANANA-STRAWBERRY PARFAITS

These Banana-Strawberry parfaits are a super simple way to make the most ordinary breakfast seem like a special occasion! Try this recipe with your favorite flavor of FlapJacked mix, along with any fruits and flavors of yogurt you desire.

Suroviny: 

  • 1 cup FlapJacked Banana Hazelnut Mix
  • 1 egg
  • 1/2 cup water
  • 1 large banana, sliced
  • 1 cup strawberries (sliced with stems removed)
  • 2 6-oz. containers of low-fat vanilla yogurt

Postup:  Combine FlapJacked mix, egg and water into a bowl and whisk until ingredients are blended well. Let sit for a few minutes while you heat up a waffle iron (on low to medium heat). When waffle iron is ready, pour half of the batter onto the griddle and cook per manufacturer's direction. Repeat with the remaining batter. Let waffles cool for a few minutes, then cut up into small squares.
In a small bowl or dessert glass, begin layering the parfait: place a large spoonful of yogurt onto the bottom, followed by a handful of waffle pieces. Place the sliced bananas and strawberries on top of the waffle pieces and repeat the layering process one more time from the beginning, and then in 3 other dishes (you should end up with 4 parfaits). If desired, top off with whipped cream. ENJOY!

Whoopie pies are one of those decadent, delicious desserts that we dream about. With rich chocolate cake and a creamy, sweet filling what's not to love? This mini version is the perfect sweet bite after a meal or mid-day treat. Our version has far fewer calories, fat and sugar than the original version (but you won't be able to tell by tasting it!).

Suroviny: 

  • 1-1/2 cups FlapJacked Banana Hazelnut mix
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 cup raw organic cane sugar
  • 1 tsp vanilla extract
  • 1/2 cup 2% plain Greek yogurt
  • 2 eggs
  • 1 TBSP melted coconut or vegetable oil
  • 1/3 cup water
  • 1 cup marshmallow cream

Postup:  Pre-heat oven to 350˚. Pour FlapJacked mix, unsweetened cocoa powder and baking powder in a large bowl and stir well. In a medium bowl, blend together vanilla, Greek yogurt, eggs and oil. Stir in water and mix until blended well. Slowly add the wet ingredients into the bowl with the dry ingredients and stir until well incorporated.
Line 2 large baking sheets with parchment paper or a silicon baking mat. Heap one rounded tablespoon full of batter onto the baking sheet and use a spoon to spread it out a little bit (while keeping a rounded shape). Repeat to create 16 heaps of batter onto each sheet. Place both sheets into the oven and bake for 10 minutes- batter should be cooked through completely. Remove from oven and let cool for at least 20 minutes.
Once cooled spread 1 tablespoon of marshmallow cream onto the flat side of one of the cakes and top it with another to form a sandwich. Repeat until all whoopie pies are assembled. ENJOY!
*If you're not planning to consume the whoopie pies within hours of assembling, store the cake part separately and apply the marshmallow cream right before eating.
